Winter Oatmeal (pears, cranberries & walnuts)

Hey, Winter.  After snowing in KC this past May, I think we can finally be friends again.  See, winter is fairly mild here in Alabama (thankfully), so we’re good.  65 degrees today…truth.

Regardless, winter means it’s time for soup, crock-pot meals, cookies & oatmeal!  Seriously, my daughter loves cookies & oatmeal & hearing her say “mmmm” when she eats them makes both of them worth cooking.  I feel a little bit better about serving her oatmeal, however, so we try to do that a little more often.

I love quick, old-fashioned & steel-cut oats, but I will make steel-cut oats when I’m serving more than just myself.  I like to make them in the crock pot overnight, like this, but you can make them on the stove top, as I suggest below.

Time to try this, mmmm.

Ingredients

2 cups of water or milk
1/2 cup steel-cut oats
pinch of salt
1/2 tsp cinnamon
1/4 cup brown sugar
1 tbsp flaxseed, optional
1/4 cup dried cranberries
1/3 cup walnuts, chopped
1 pear, diced small
additional milk & sugar, for serving

Directions

  • Bring water or milk to a boil in a medium pot.  Stir in oats, reduce heat to low.
  • Simmer, uncovered, over low heat, stirring occasionally, for 25 min.
  • Add salt, cinnamon, brown sugar, flaxseed, cranberries, walnuts & diced pear.  Stir & cook an additional 5 min, or until oats reach desired consistency.
  • Serve with additional milk & sugar, to taste.

Serves 2!
