They say it takes a village to raise a child. Well, I’ll take another village, please. Or a personal assistant will do.
I could spend a couple of hours preparing dinner every night, but you see, I don’t have that village or assistant. And, I do like spending time with these cuties.
So, quick meals it is.
Nearly everyone does the occasional taco night. Some may call it a yawner recipe, but that’s really not completely fair when everyone loves tacos. And they are easy to make. And versatile.
Here’s just 3 meal taco ideas that I frequently call upon.
First, there’s your standard taco night with tortillas. I usually go for ground turkey and brown it with an onion & garlic, seasoning it with my own taco-like spices & adding some (rinsed & drained) black beans. We will eat that in tortillas with cheese, lettuce & salsa.
Second, I can pile the remaining meat mixture into pizza dough with cheese for a different & easy meal the next night. See this Taco Roll.
Third, there’s the classic taco salad. (Anyone remember the Bud Light commercial…”Of course, it’s healthy, it’s a salad”). My parents are the masters of the taco salad; I feel like I grew up on this meal. Toss the leftover taco meat with some lettuce, served with some cheese, salsa & broken chips. Easy.
I even mixed leftover taco meat in with some eggs and made a taco frittata; easy.
You can do all this with taco-flavored chicken, plus a dozen other taco-inspired recipes (e.g. Soup, casseroles, dips). These are my (current) ideas, but I’m searching for more, until my assistant or village arrives…
