Cadbury Mini Egg Chocolate Cookies
Do you know many years have I tried to give up chocolate for Lent? I start out so good at first. Then a few hours pass & it goes down hill. Fast.
So I adjust my resolution to be certain types of chocolate on certain days. Like no M&Ms on Tuesdays between 2 to 5pm. And then 3 days into lent I give up.
So, no, I’m not going to attempt giving up chocolate this year. I’m going to (try to) give up Facebook. Time to spend more quality time with these guys.
Since I am eating chocolate, I am sharing a fun cookie recipe! I look forward to these Cadbury mini eggs every Easter & I buy them as soon as I see them on the shelf (which was early January). Don’t even try to tell me these aren’t the best thing ever.
It was like a light bulb went on when I thought about making them into a cookie. 💡 Why haven’t i thought of this before!?

helper eater this weekend & baked these cookies again…a recipe worth sharing.
I used my chocolate chip cookie recipe and just swapped out the chocolate chips for the chopped Cadbury eggs. Added some mini chocolate chips to ensure every bite had some chocolate in it. Delicious.
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 large eggs, room temp
2 tsp vanilla
3 cups all-purpose flour
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
1-10oz bag Cadbury Mini Eggs, roughly chopped
2/3 cup mini chocolate chips
- Preheat oven to 350 degrees. Line baking sheets with parchment paper.
- Cream together butter & sugars until smooth, about 3 min. Beat in eggs & stir in vanilla.
- Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, then mini chocolate chips & Cadbury Mini Eggs until just combined.
- Make large spoonfuls (about 2 tbsp) & place on parchment paper on cookie sheet. Bake 11-13min or until cooked through.
PS- I often freeze cookie dough to make later. Make into balls, freeze in a single layer in a large ziplock; take out (frozen) when you want to eat and just bake in preheated oven, adding an extra minute or two.
